Peanuts or groundnuts are part of the legume bean family, the seed part of the plant formed in seedpods. Poor storage of peanuts can lead to an infection by the mould fungus Aspergillus flavus, releasing the toxic substance aflatoxin. The aflatoxin-producing moulds exist throughout the peanut growing areas and may produce aflatoxin in peanuts when conditions are favourable for fungal growth.
